Chocolate Biscuit Pudding Recipe

Hello my lovely foodies

I apologise again for another late update on my "Sunday Bakes" post. I was just super busy yesterday and didn't have the time to blog. To make up for it, I'm going to share a very simple and traditional recipe with you today. 

This dessert is called "Sri Lankan Chocolate Biscuit Pudding" which requires NO BAKING whatsoever :) 




WHAT YOU'LL NEED:



INGREDIENTS:



  • 250g digestive biscuits 
  • 250g icing sugar 
  • 150g butter, softened 
  • 1 egg 
  • 1 teaspoon vanilla essence 
  • 2 cups milk 
  • 3 tablespoon cocoa powder 
  • 1 cup cashew nuts, chopped 

1) Combine butter and sugar until creamy. Add cocoa powder. After everything is mixed well, beat in the egg and vanilla until mixture is smooth.


2) Dip biscuits into milk one by one as the biscuits get soft very quickly.


3) Base: Chocolate Layer, Second Layer: Milky biscuits, continue until there is no chocolate mixture left. But make sure the top layer is chocolate layer instead of biscuits layer.


4) Decorate with chopped nuts and refrigerate for 3-4 hours before serving.


Voila!


Super quick and super easy. Give it a go! Although if you don't like your desserts too sweet, change the icing sugar to 200g instead of 250g.

No-Bake Chocolate Cheesecake

I've seen so many no-bake chocolate cheesecake recipes on-line and on baking magazines. So I decided to take a couple of ideas here and there and modify the ingredients and make my very own no-bake chocolate cheesecake recipe :)

Well, I won't really call it my recipe anyway.


As you all know, when it comes to cakes and desserts, I'm always adding less sugar than expected and trying to find a healthier substitute because I'm "healthy" like that. Oh who am I kidding! Healthy cakes? HAHAHHAA!


Anyway, I tried this out on Sunday and only got to taste it last night (Monday night) because I had to chill it overnight. It tasted amazing! (I mean, I am of course going to say that :P)


Enough talking. Here are the pictures and recipes :) Whooop whoooop....





INGREDIENTS




BASE:


  • 250g digestive biscuits, crushed
  • 2 tsp cocoa powder
  • 150g butter, melted
Basically, combine these 3 ingredients well and press it into whatever cake tin you want to use (I used a round cake tin). Then let it chill in the fridge while you're preparing the filling. 





FILLING:

  • 1 tbs gelatin
  • 1/2 cup hot water
  • 250g cream cheese
  • 3/4 cup castor sugar
  • 2 tbs lemon juice
  • 300ml double cream
  • 175g dark chocolate
  1. Combine gelatin and hot water and set aside. Warning: this might smell terrible to some people so put it as far as possible.
  2. Combine cream cheese and castor sugar until smooth and then add lemon juice.
  3. Whip the double cream until soft peaks form. Add this cream to the cream cheese mixture. 

4. Microwave the dark chocolate until melted and whisk into cream cheese mixture.




5. Pour onto base and chill overnight (I thought it can be chilled for 2 hours but the mixture was still runny so I decided to chill it overnight to be sure).




DECORATION:

  • 200g dark chocolate
  • 3 tbs milk
  • Walnuts (or any other nuts you like)
  • Kinder Bueno (or any other chocolate snacks you like)
Basically, just melt dark chocolate and milk in microwave and pour it onto the filling. Decorate with walnuts and chocolates. Set aside at room temperature for about 20 minutes or chill it for 10 minutes (totally up to you). 











Voila!

Restaurant of the Month: Apparo

Hello my lovely foodies out there :D

It's time to see which restaurant made it to my blog for the month of March - although I kind of gave a little hint in my previous post.


So, the restaurant of the month is....................














............. Apparo







This place is a hidden gem - definitely!


It is located in between South Shields and Sunderland so it takes about 20 minutes by bus to get there.

I really wanted to explore more out-of-town restuarants and I never thought I would find this place. My boyfriend and I got off the bus and just started walking around trying to find a random place to sit down and eat. And we stumbled across this place.

From the outside, it looks really normal. Just like your average coffee shop/cafe. Walked in and holy heck! The atmosphere was amazing! Modern decor, nice and warm feel, cosy couch, wide selection of cakes, friendly staffs. I mean, this place is sort of like a cafe/restaurant/tea room. The menu is really good and well put together.


I didn't know they do afternoon tea until a family ordered that. It looked soooo GOOOOD! Definitely coming back here next time.

I didn't take many pictures this time because there were only 2 of us eating. Apologies.



All you hot chocolate lovers out there, this is definitely worth a try! Really amazing!

I know this seems kind of normal and old fashioned but the main reason this restaurant made it to my blog is because of the atmosphere. And just look at how they plate everything. Professional. Worth a visit!

All Things Easter

Good afternoon my lovely readers

I hope you all had a wonderful Easter and for those of you who are still on your Easter break, I'm jelly :( So so jelly.....

Anyway, my post today would just be a casual update on what I was up to during my short little Easter break.

I've never really fully understand the concept of Easter eggs or Easter bunnies or why we receive them during Easter and I don't intend to look up on it because I'm sooooooo loving all the Easter chocolates I've received!

I mean, just look at it! It's perfection!


Seriously though, if you asked me, I'd probably have some kind of chocolate overdose after consuming all of these :/


Mmmmmm... Happy Easter indeed :)


My boyfriend managed to get one massive chocolate egg which is bigger than my head but seriously, Thorntons have the most insane chocolate eggs I've ever seen in my entire life!

As you all would probably know by now, I bake every weekend whether it's Saturday or Sunday. Sometimes, I try to bake on both days. So I was super excited to bake something for Easter. I call them Mini Easter Cheesecakes (view previous post for details).



Had a really nice chilled Saturday night watching BatmanVSuperman in the cinema with boyfriend and Nic. Got takeout after movies and chilled at my place watching "The Big Bang Theory", which is now my 2nd favourite sitcom!


Had a relaxing Sunday with them two as well. Going to the pub for food and drinks. Really had some alone time these few days which is really refreshing.



Easter Monday turned out to be Easter Food-day for me. Went out to try out a new place with boyfriend. I think this bistro might be featured in my "Restaurant of the Month" unless I try out some more new places in the next few days. But I doubt it. I really liked this place.


To avoid spoilers, I'm not going to give any more information or any more pictures about this place :)


Went for a girls night out with my 3 favourites!


I mean, it's just meat overdose that is. Good friends + food = what more could I ask for :)



Basically, I had a really nice break with all my friends, chocolates and food.


I hope you all had a nice relaxing break as well.
